I found this handsomely-illustrated hardcover at a local Savers thrift shop, and picked it up for another release copy, along with the follow-on volume Second Helpings of Roast Chicken.

It's a chatty cookbook with some personal notes, nods to favorite chefs, and a variety of recipes from basic to intricate (leaning towards the doable-by-the-average-person, which is nice). I enjoyed the author's comments on how he discovered certain foods, his own prejudices, and the proper handling of favorite ingredients.

Grouped by ingredient, it touches on everything from asparagus to tripe, potatoes to brains, and - of course - chicken. Among the recipes I noted down for possible future use were a dark-caramel ice cream, roasted potatoes with rosemary and garlic (LOTS of garlic - two whole heads, roasted along with the potatoes!), and saffron mashed potatoes, but there are loads more, all very tempting.

Among the references to other authors was one strong recommendation for French Cooking in Ten Minutes, by Edouard de Pomiane, which I'd enjoyed; I was tickled to find it mentioned here (in the "tomato" section).

Lovely and inspirational cookbook!
