An interesting slim book that has significantly raised my cholesterol levels just by reading it: The recipe for Tarte Chambord and its accompanying cream and frosting contains 2 and a half cups plus 1 tablespoon of sugar, 18 eggs (yes, eighteen!), and 1 cup and 5 tablespoons of butter. The Virgin Sauce recipe (for one person) contains 5 tablespoons butter plus one of whipped cream. And the Rillettes contain 2 pounds breast of pork and 1 pound of lard. Yikes!
