Well, two out of those three ended tragically and the other pair spent most of their best years apart, so I think I'd choose elsewhere {wry grin}.
The first literary couple that comes to mind for me, a pair that really earned their happy ending, is Peter Wimsey and Harriet Vane from Dorothy L. Sayers' "Lord Peter" novels. [One of my favorite bits from the books has to do with a rocky point in their relationship (one of many); it's mentioned that Peter is experienced enough to be able to appreciate the romantic ups and downs rather than angsting over them!]
Another favorite couple is from E. M. Forster's novel Maurice ( http://www.bookcrossing.com/---/4227760/ ); Maurice is one, and the identity of the successful lover might be considered a bit of a spoiler so I won't name him here, but it's in the journal entries. [Side note: I see to my GREAT dismay that there are no release notes on that book. I had hoped that the data-loss from the site changeover had been limited to few, and older, release notes, such as a few I noticed from very early releases, but this one was released in 2006 or later, and it makes me wonder how much release info we really *have* lost... I wouldn't have noticed this one if I hadn't searched for the book in order to post it here, so there could be many, many others that I haven't noticed yet. Sigh.]
Oh, and then there's Faramir and Eowyn from Lord of the Rings - it's a minor element of the story but it makes me very happy every time I read it.
