I've had this book on my cookbook shelves for some time now, and I've made notes of the recipes I want to use, so this copy can go traveling.
This is a fun little cookbook with recipes interspersed with tales about the local residents and their doings in the swamp. From simple recipes like "Granddaddy's Beer Biscuits" to elaborate ones for making "Louisiana Redfish Court Bouillon", and including recipes tailored for hunting or fishing camps, this book kept my mouth watering. There's "Catfish Chowder" and "Deer Meat Pie" and "Louisiana Sweet and Sour Nutria" (there's something you don't see in "Joy of Cooking"), and classics such as "the real Southern Mint Julep".
Some of the recipes are clearly aimed at the quick-and-easy style, such as "Camp-style Beignets" which use refrigerator biscuit dough as a base, or the beer-biscuits that rely on "instant biscuit mix" (aka Bisquick). Some recipes are amazingly simple: Uncle Dale's Camp Bread calls for 2 c. flour, 1 c. Crisco, 1 c. water, and 3 T. sugar, to mix, place in a greased cast-iron skillet, and cook on the stovetop for 45 minutes.
There are references for places to order some of the more unique ingredients, so no need to fear if you have no alligator or nutria in your back yard!
